Cucumber Zest


  • 1 cup (approx. 20 slices)thickly sliced
  • unpeeled Cucumber
  • 10 depitted Black Olives, cut into halves
  • ½ cup Hung Curd
  • 2 tsp crushed Garlic (Lehsun)
  • freshly ground Black Peppercorns (Kali mirch)to taste
  • 1 tbsp Olive Oil
  • 1 tbsp Thyme
  • 1 ½ tsp Lemon juice
  • Salt to taste
  • 1 small Tomato
  • a few sprigs of parsley(for garnishing)


  1. Combine hung curd, garlic, thyme, olive oil, pepper and salt
  2. Arrange the cucumber slices on a flat dry surface and top each cucumber slice with little topping mixture.
  3. Garnish with thin tomato slice, olive and parsley.
  4. Chill in refrigerator
