This quinoa recipe is packed with protein, colorful veggies, and aromatic spices- a nutritious delight in every bite.”

Ingredients:

  • 1 cup cooked quinoa
  • 1-2 chopped onions
  • 1 bunch of spring onion, whites and greens separated
  • 1-inch piece of ginger
  • 1-2 carrots, finely chopped
  • 3-4 beans
  • Oil
  • Salt, to taste
  • Spices: 1/4 tsp chilli powder, 1 pinch of pepper

Method:

  1. Heat 1 tsp of sesame/sunflower oil in a wok. Add ginger, onion, and spring onion whites. Sauté until fragrant.
  2. Next, add carrot and beans. Cook with spices and salt.
  3. Then, add quinoa and stir until well coated.
  4. Garnish with spring onion greens.
