Ingredients:
- 100g Millet pasta
- 100g Cherry tomatoes, halved
- 1 tsp of tomato paste (optional)
- 4-5 cloves of garlic chopped
- 1 tbsp. Olive oil
- 5-6 leaves of basil
- Salt to taste
- 1 tsp Italian seasoning powder
- Blanched vegetables such as broccoli
Method:
- Boil millet pasta in salted water, according to instructions (it should take 4-5 mins)
- Once cooked al dente, drain the water, saving a small amount and toss with some oil.
- In a pan, heat some olive oil and add all the chopped garlic. At this stage, you can add mushrooms or chicken, if you are using the same.
- Once fragrant, add in tomato paste (if in hand) and cherry tomatoes. Slightly muddle the tomatoes and allow it to release its juices. Add salt. As it cooks, add in a little bit of the reserved water.
- Add in seasoning and tear the fresh basil before adding it to the pan
- Add In cooked pasta. You may crumble some paneer or add in some cooked shredded chicken for added protein.
- Serve hot.
