Quinoa Salad- Desi style

Ingredients:

  • 1 cup Raw quinoa
  • 2 cup Water
  • 1 tsp salt
  • 1 Onion- Chopped
  • 1-2 small Green Chilies
  • As required Coriander leaves- Chopped
  • ½ Red Bell Pepper- finely chopped
  • ½ Green Bell Pepper-finely chopped
  • ½ Cucumber- finely chopped

For the mint chutney Handful each of:

  • Mint Leaves
  • Coriander Leaves
  • Green chilies
  • Few pieces of Ginger
  • 1-2 cloves of garlic
  • A pinch of Salt

Method:

  1. In a saucepan, place 2 cups of water, lightly salt it and add 1 cup of quinoa. Cook for 12-15 mins, till it swells and uncoils a bit
  2. Pass through a strainer to get rid of all excess water and allow to cool. In a large bowl, toss in the dried and cooled quinoa, chopped onion, green chilies, coriander, bell peppers and cucumbers and mix well
  3. Add in a spoon full of mint chutney and mix well
  4. Top off with chaat masala.
